I have been given a humongous amount of courgette. what do I do. help!

friend has far too many growing in her a allotment and gave me 2 big bags today.

I am not usually a big fan of it so hardly ever buy it. no idea what to do with it.

any ideas?

Soup! Onion, veg stock, large diced potatoe, courgettes, simmer until soft, blend, salt n pepper - freeze (can add some cream too) it's lovely, I don't measure ingredients either

Also got a large courgette from friend's allotment (might be the same friend!). Hollowed out courgette and fried with onion, sun dried tomato and herbs and topped with goats cheese. Baked in oven, delicious.

Delicious raw with a dip.

I had them tonight raw with a mayonnaise, smoked paprika, lemon juice, chopped fresh mint and garlic dip.

They are lovely sliced thin and grilled with olive oil.

I also make courgette pesto when I have a glut:

Chop a small onion or shallot up very small, cook well, add grated courgettes and cook until they go very brightly coloured (not too long). Remove from heat and add any herbs you have to hand. Basil, mint, thyme oregano...allow to infuse for about 20 minutes.

I keep it like this for a few days in the fridge, and either serve it with some mixed seeds to have with bread and cheese, or add it to just about everything I am cooking: tarts, quiches, pasta, risotto, egg tortilla, bread, pizza...

The original recipe was for a bread spread with this and goats cheese and all rolled up - it's lovely that way too.

Grated courgettes mixed in with minced meat will make your burgers really juicy and moist - you won't notice the courgettes but the meat will be lovely.

Hollowed out and stuffed with minced meat, bread crumbs and the bit of the courgette you removed then baked in the oven with tomato sauce.

Courgette 'bread' is a nice cakey thing in the spirit or carrot cake. Loads of recipes online.

Can you tell we always plant too many courgettes?

Courgette cake is a winner here - slightly altered Nigel Slater in the guardian. Normally miss out the pecans and add extra sultanas and have a bit more apple and sultanas. Got some soup in the fridge I made yesterday and not tried yet. I'm also relying on work colleagues to get through our bounty!

Chop lengthways. Fry/ griddle in olive oil. Add some spice eg turmeric. Serve with a splash of lemon juice

Cake! Chocolate courgette cake is fab and there are also variants on carrot cake and other recipes.

I had courgette with feta, lemon and mint the other day, vey thinly sliced with a peeler. Also chopped in pasta, or griddled on the side with meat or fish. Roasted with other veg in a lasagna....

I found the most amazing courgette recipe this week in Dairy Diary 2016 for spicy lime courgettes. Mix grated zest & juice of a lime with 1 tbsp caster sugar, 1 tsp olive oil, 1 tbsp. boiling water & 1 deseeded, chopped red chilli. Add this to 2 trimmed & grated courgettes. Leave for 10 mins for flavours to develop. Fab as a BBQ accompaniment & absolutely delish!

Another vote for cougetti. I don't have a spiraliser - just use a peeler to get thin strips.
Also hollow out and bake with a tomato based sauce (with a bit ofbacon in if you eat meat) little bit of grated cheese on top... Yum.

Then my favourite way is grated courgettes are ace in salads. Either add one to a normal salad as you would a grated carrot or try this veggy version of a Thai style one:
Grate 2 parts cougette to 1 part carrot. Squeeze the excess liquid from the cougette.
Mix crushed garlic (trust me), chilli, freshly squeezed lime juice and brown sugar to taste, should be zingy but slightly sweet. Best to do this first before the grating and leave it for 15 mins whilst grating the veg. Then add soy sauce - about half as much as you had Lime juice
Chop some other veg - green beans or mange tout are good and half cherry tomatoes.
Mix all together and leave fur a couple of hours
Add toasted peanuts (I've substituted cashews before)
It's a winner - several people have asked me for the recipie.

Sliced and roasted with some onion and added to a tortilla/frittata.

Grated and lightly cooked with garlic and chilli and stirred through pasta.

Courgette gratin - sliced, cooked along with onion in a basic roux using milk and stock with a bit of nutmeg, top with breadcrumbs and Gruyere and bake.

Sliced lengthways incredibly thin and marinated in lemon and olive oil. Good side for summer meals.

Carrot and courgette soup - equal parts courgette and carrot sweated in butter, add chicken stock and any other aromatic you might like (bay or something), boil til soft and then purée until smooth.

I put small bits chopped up in most pasta sauces.

If you don't mind the effort, courgette fries are amazing!

I love courgettes!

Buy some hallouimi cheese. Marinate the courgette and hallouimi squewers in garlic, lemon, chilli. Yum.

Slice mega thinly, chuck them in a plastic bag with a tsp of oil, salt and pepper. Shake, then arrange on a plate and microwave for 8-10 minutes - keep an eye so they don't burn- courgette crisps! Mega yummy :)

I usually add a bit of crumbled Feta for the last 5 minutes or so of cooking time.

It also works well with 1/2 the quantity of lamb mince and a drained can of whizzed chickpeas (mixed with the lamb) for a cheaper / healthier option.
