Meal planning thread anyone?

We've been pretty slack lately and have been eating too expensively and too unhealthily.

Time to get some planning done!

I'm feeling low on inspiration though for the fairly warm week coming up here. What are you cooking this week? We tend towards vegetarian but am happy to hear any and all ideas!

Monday home made sweet chilli chicken pizza. 10 month ds will have a small piece with extra raw veggies

Tuesday salmon, sweet potatoe mash with veg. DS loves this

Wednesday, chickpea and spinach curry with rice for me and dh. DS will have a batch cooked meal from freezer

Thursday chilli, rice, sour cream and nachos

Friday chicken tagine with cous cous

Tonight - baked pea and rocket risotto
Tomorrow - pasta with green veggies and pesto
Tuesday - Greek salad with hallumi
Wednesday - butternut squash, lentil and spinach curry
Thursday - veggie stir fry and egg noodles

Just been doing an online food order and I am thinking of stuff along the lines of:

Pasta with smoked salmon, Creme fraiche and spinach
Chicken thigh, new potato, pepper and chorizo traybake
BBQ salmon fillets with a tandoori marinade, with rice and salad
Chicken fajitas
Niçoise salad
Veg and cheese frittata and salad

Ours is very meat based I'm afraid!

Lamb, chickpea and butternut squash tagine with couscous.
Tuna pasta bake with salad.
Sausage and tomato bake with polenta and salad.
Penne bolognese with salad.
Pulled chilli beef wraps with salad.

Not that hot here in Wales either. Forecast seems to be mainly rain.

Sorry, I missed baked rice with chicken and chorizo off my list. With salad (we have lots of salad).

This week:
Monday- prawn and chorizo paella
Tuesday/Wednesday- butternut squash and lentil curry (we have duplicate meals if I'm working a long shift)
Thursday- piri-piri chicken thighs+spicy wedges
Friday- crispy cod (simple almond/coconut batter, tastes lovely when pan fried) with a homemade tartare sauce and minty peas.
Saturday- roast chicken dinner
Sunday- slow cooked beef brisket with canellini bean and leek mash

Sorry it's also a bit meat heavy this week! I made Beetroot burgers recently and they were fantastic!

In no particular order
Crab and chilli linguine
Greek yoghurt flat breads with figs, rocket, Brie and pine nuts.
Falafel in pitta bread
Moroccan chicken and chickpea tagine with cous cous
Baked gnocchi with chorizo, spinach and Mozzarella
Blackened cod with mango salsa and salad
Balsamic chicken with asparagus and tomatoes (&sweet potato wedges if anyone wants them)
