Vegan spinach recipes, NOT curry?

Vegt box full of spinach.

I'm trying to avoid dairy products - unfortunately all my spinach recipes seem to involve cream or cheese or both.

Dh is a bit sick of my 'if in doubt, chuck it all in a curry' approach.

cook it and freeze some of it in small batches always useful to have around. i mash spinach into mash potato sometimes for a change.

a sald of spring onions, almonds, bacon and spinach witha good string ddressing is nice.

also you can make a pesto out of spinach which is a good stuffing for fish. process spinach a handful of pine nuts, a handful of grated parmesan, a garlic clove, salt pepper and a bit of olive oil in a blender. slice and stuff thick fish steaks with this. or spread on a thinner fish and roll it up, hold it in place while cooking with a toothpick.

fry onion, add tomatoes and spinach. lots of olive oil. eat cool with nice bread yummo.

Excellent thanks!

We had a Rose Elliott risotto today which shifted some of it. But there's only so much risotto one family can eat, especially given dh's insistence on re-enacting the Young Ones sketch ('it's a risotto, Mike')

make pesto or shred it and add to pasta to be honest i just chuck it in everything as always get tonnes in veg box, nice in a fishpie too

you can make quite a nice vegetarian lasagne with spinach (normally I would cream the spinach for this but you don't have to)

for 2 vegetable fillings - one is mashed butternut squash, the other is spinach with fried onions and tomatoes.

Layer pasta, then butternut, then pasta, then spinach, then pasta etc. and end up with a layer of spinach mix on top.

The butternut has to be quite wet for this to work (as does the spinach mix but it's normally very wet anyway from the tomato juice and the spinach) so if it is too dry, add a bit of either olive oil or water when mashing.
