Coconut Posset

Anyone got a good recipe for coconut posset? I had some in a very posh restaurant on Friday and it absolutely rocked, so now I want to know how to make it.

It came with a very sharp lime jelly and was HEAVEN.

As far as I know posset sets due to some sort of reaction between the cream & the acid (lemon or lime juice normally). I don't see how it could work without the acid (assuming there was no lime in the posset itself, just in the jelly)

They all seem to need some sort of citrus.

There are 2 approaches above - the lime one is traditional with desiccated coconut, the lemon one uses coconut cream and is vegan

It definitely wasn't a panna cotta (just a little too soft), and you may be right, it may not even have been a true posset (but was called that for want of a better name).

The BBC one looks most likely. Thanks CDtaylormats - I think a fair amount of experimenting will be going on over the next few days........
