I have a lurvely recipe with chicken, spuds, quartered red onions and lemon chunks in an all-in-one pan roasting thing but I don't know where it is, could you improvise with those ingredients? (There is a lemon-juice-and-zest-and-honey pour-over sauce thing too)

I've bunged them in the frying pan with slices of lemon and the juice of another one. Popped in some garlic and am about to throw in some dry white wine. Then a bit of flour to thicken the sauce. That should work as no-one had a foolproof recipe for me [sob]

I know it's too late, but I would fry the breasts in butter, then squeeze lemon juice over each time you turn them. Like the idea of adding wine, then thickening to make a sauce as well

I did wonder about butter.

No all the thyme is gone!

So far so good. Tastes lemony lol!

I would have marinated the chicken in lemon juice and zest with olive oil, herbs and garlic and then baked them in the oven.

lots of onions, lemon and garlic with alcohol (glass of wine or vermouth eg noilly prat) and water if it starts to dry up. chuck whatever veg you have in too like carrots or just steam them to serve with it (and some couscous)

I don't do marinades babe! That takes all the fun out of "ooh let me be spontaneous tonight". You see I was going to make a chicken curry... then I thought... well I've got no naan bread... then I thought.... ooh but I have lots of lemons....

Do you see? lol

I do see Alternatively you could have made JO style foil parcels with lemon juice, zest, herbs garlic and olive oil and then baked them. How's that for spontenaiety?

don't need to marinate, just chuck it in oven

Now that's an idea for next time! lol

Hmmm... it seems to taste a wee bit too lemony at the moment. Suggestions? (preferably here and not on a postcard)

bunged in carrots and peppers. It was lovely... but still too lemony...

So next time... just lemon slices and I'll cook the chicken breasts in butter first!

Oh and I'll do those other recipes... who knew so many MNers were registered with nigella. lol
