I need a subsitute for cocnut milk in Sweet potato & Pepper soup

Someone gave me the recipe & I though I'd just leave the coconut milk out as I'm intolerant to it

Unfortunately it needs something as it has a bit of a bitter taste - I can't use milk or soya milk as I'm intolerant to them too

Any suggestions?

What's the overall flavour? I.e. Thai-style spicy, Carribean etc? Is it all dairy you're intolerant to?

Maybe just a teaspoon of sugar / honey?

Pretty much all dairy

Umm it's very vegetabley really - I wonder if I should have used more red peppers

I may go with sugar

Thank but no Almond is on my intolerance list too Hmm

Thanks for the help - I'm going with sugar I think but I'll add it after I defrost in case it 'matures'
