Cook book suggestions - fussy eating teen vegetarian

My 17yo has recently turned veggie, which has been a bit of a challenge to me, mainly as she's

a) fussy
b) tries to minimise carbs
c) lacto intolerant (but not hugely)
d) not all that keen on vegetables
e) ditto fish

The meat thing is an ethical issue for her, carb avoidance is, I think, an effort to stay skinny, the lactose intolerance is new but not strong, and the not liking veg and fish is a just a pain in the arse.

It's a friggin nightmare to feed her! I'm a pretty good cook, but am lacking inspiration. She's good with salads, loves food she views as "healthy and clean"' I use quite a lot of quorn, but she's got a bit sick of it. Can anyone recommend a decent veggie or vegan cookbook. Thanks.

Cas Clarke does great veggie cookbooks, think there might be a student one which should make it less faff for you, and it's not all lentils!

The two Anna Jones books are pretty good, I think.

Get her to do some research around recipes she fancies and cook for herself sometimes perhaps? All sounds very hard work with her restrictions. Help set her up for the big bad world when she finally leaves the nest.

There are some alternatives to lentils on the link - 5 Grains, Quinoa,s, Polentas, cous cous.

There are also lots of recipe ideas

Our ds went veggie aged 10 ish. At first he was fussy. Then dh sat him down and told him very clearly that he could be fussy, or he could be veggie but he absolutely could not be a fussy veggie.

He took heed. He learned to wat things that suited his beliefs if nit his palate and also to cook for himself if needs be.

I would tolerate self imposed restrictions and fussyness.

Highly recommend Sam Stern's Eat Vegetarian

Loads of choice, easy recipes to make & also has good cake recipes

(unusual for veggie cookbook - who all think that just because your veggie you don't like sweet treats!)
