vegetarian recipes, easy on the tomatoe base

I cook a lot of veggie recipes but always seem to put a tin of tomatoes in with them.
tins of lentils/beans
veggies.

have you any other suggestions where a tin of tomatoes is Not asked for?

Take a look at the vegetarian society webpage, they have some lovely recipes and not all tomatoe based.
The Thai red curry in very nice, and I'm not even vegetarian

I'm a vegetarian and currently skint and I'm basically living off this:

Garlic/onions finely chopped
Mix of veg (I use the frozen waitrose grilled med veg because I'm lazy, sometimes add other bits)
salt/pepper
herbs/spices (I do either indian or italian or spanish with paprika etc)

bake/fry off until cooked, add crushed nuts so they toast slightly then mix with cooked couscous and some chopped spinach.

So easy and quick and CHEAP and actually v nice. Can add feta etc too and is a good way to use up veg

Boureki (courgette and potato bake) is a nice, cheap and filling meal, but takes 2 hours to cook. I reckon you could slow cook it though.

MrsRead - the ready made ones? Are they nice? What fillings do you put in? My obvious filling of choice would be mushrooms and spinach in a creamy sauce, but dd2 won't eat mushrooms.

remus we have savoury a lot. Out favourites are spinach and ricotta pancakes rolled up and baked in a tomatoey sauce, goats cheese and roasted beetroot, and sweet potato and feta dosas. Not a mushroom in sight!

On the meal plan for the week, I've got:

  • Spinach and feta pie served with grated carrot salad
  • Roast sweet potato with red lentil dhal
  • broccoli macaroni and cheese


(We are not vegerarian but will have a few vegetarian dinners each week)

I've learned how to make aloo gobi, it's cauliflower and potato cooked in Indian spices. It's my new veg fave.

Aloo gobhi is lovely - you can get lots of different recipes. My one uses natural yoghurt as the sauce.

Mattar paneer is lovely too. I don't put tomatoes in mine - just fry onion, garlic and ginger with some spices, then add lots of frozen peas and some stock or water and then stir in the paneer, which has been fried separately.

Yup spinach & ricotta - although 2 DC scraped the green stuff out!

Will try cheese ones & maybe mushroom too?!

We love this: 8thday.coop/recipes/caribbean-stew/ but use canned beans. Delicious!

Wahey! I love spreading the love for this recipe because it reads a bit oddly! (Peanut butter and orange juice!) but is honestly delicious. Spoon bread or cornbread dumplings work well with it too. Enjoy!
