I need to start cooking more healthily and doing more exercise but have no time for either! I'm thinking a combination of batch cooking and freezing and prepping the night before and using a slow cooker might help me out because then I'll be able to get some exercise in once I've got the kids to bed which is the time I normally cook and then eat straight away afterwards.

I'm struggling to find any healthy / low fat recipes that work for freezer / slow cooker. There is the obvious lasagne for freezer meals but I'm lost for other ideas.

I'd be grateful if anyone could recommend a recipe book or any recipes that would work for me?

Many thanks!

I generally chuck a load of vegetables in the slow cooker with a tin of tomatoes, a stock cube and some seasoning (herbs, spices, whatever suits) - usually comes out pretty well. Can add chicken or fish to that if you have them - fish at the last minute so it doesn't go to mush.

Just bolognaise instead of lasagne, curry if you like, chilli con carne etc. Try here slow cooker recipes

I chuck in need tomatoes chilly power and root veg

Or slow roast gammon

Or chicken stew

Lots of ready sachets about that are good - but you can usually make your own with spices

I always save one portion so there's something if me or DH isn't home -

All work in the freezer -

This is great

I make a huge batch and serve with mash or rice, make some into pies, slice potatoes on the top to make a sort of hotpot.

How about the One You healthy recipes on the NHS website? They will cost you nothing and the site has had the best nutritionists working on it.

Thanks all. Perhaps I don't need a recipe book for the slow cooker then, I can just improvise. I hadn't heard of the one you site - I have downloaded the "app" now!

Thats a link to BBC Good Food recipe books on Amazon. All recipes are from the BBC Good Food magazine and they are on offer at the moment. They have slow cooker, healthy eating and simple recipe books.
