I need a really tasty but easy curry recipe!

I already have a great recipe for sweet n tangy curry but have it every week and don't want to end up hating it so need to mix it up a bit! Every other curry I make just isn't right! Can anyone help? It needs to be easy I don't want to make my own powders or pastes etc. Thanks in advance smile

Buy some tandoori curry paste.

Fry chicken and onion, add veg.

Add couple of spoons of tandoori curry paste and fry. Add natural yogurt at end of cooking and stir in.

Serve with coriander, almonds etc to garnish and rice/nan.

Coconut milk, chicken stock cube, tbsp or 2 of curry powder, tsp of ground ginger, tbsp flour, squeeze of tom puree, chicken breasts, some frozen onions, small tin of pineapple cubes in natural juice (chuck juice in as well) and handful of raisins. Works every time. I shove in slow cooker but you can make on thr hob properly by browing stuff. I add mushrooms sometimes as well.

If you don't want to faff with different spices, do you live near an Indian wholesalers? If you do they will have piles of boxes of ready made curries (mix dry spices) for around 50p - £100

We tend to make our own but if we can't be arsed with the faff we just open a box up and it's easier.

Also at the Indian wholesalers the veg, fruit and meat is very cheap

I made a lovely aubergine curry the other day. Onions, garlic, crushed cumin and coriander seed and fresh chilli and ginger fried over medium heat for a few minutes, then added cubed aubergine and fried until coated in oil. Then chucked in a couple of chopped fresh tomatoes and a teaspoon of turmeric, a chunk of creamed coconut block, some cooked chick peas, fresh spinach and some water and stock powder and simmered until the aubergine was soft. Nice with chopped fresh parsley or coriander and a bit of yog over the top. I sort of made it up but was amazing and super easy to do, will make again.

I really like the first recipe on this page You can simplify the recipe by (a) using chopped tinned tomatos (b) ommitting the yoghurt and / or fresh corainder and it's still yummy. It does use several different spices but there's no need to grind/crush/dry roast any of them. I just use the ready powdered stuff.

Oh, we don't bother roasting and grinding cumin seeds etc, just use ground spices and it works fine.

I use this all the time, both the recipe, the principles and the link; wonderfully simple and has given me the insight to just chuck in whatever I have in the fridge, a bit like soup.
