I have just discovered orgasmic spaghetti sauce! Want to share it with you.

Main ingredients for two people:

1/2 Onion finely diced
Passata (smooth) 250 ml
Philadelphia cream cheese
Salt, tspn.

Additional options:
Salt N Pepper, oregano, chopped parsley, grated Parmesan.

Sautee your onions till done, stir in the Passata and salt, cook down for a while, 20 min approx, then stir in 3-4 spoonfulls of Philadelphia. (optional herbs at this point).

Stir all into your cooked spaghetti.

Serve up with chopped parsley and/or grated Parmesan.

SUBLIME.

That is my go to sauce, but instead of the Philadelphia I just grate cheddar in and on top. Great isn't it?

It's specifically Philadelphia that gives the Sublime quality. Cheddar cheese is an entirely different ingredient! Wink

Like the sound of that... But next time, try adding zest of half a lemont, (brings out the fruitiness of toms), Mascarpone instead of Philadelphia and add dash of balsamic vinegar right at the end...!!!! Let me know what you think...

forgot to add - I usually add in just about half teaspoon of sugar to help balance acidity of toms..

Lemon zest? Who'd have thought it!

(Can't believe I've just discovered Passata after using tinned tomatoes all these years either.)

Will give a the lemony balsamic thing a try next Grin

I like creme fraiche in a basic tomato sauce, takes it to a whole new level.

Off topic (slightly) have you ever tried making tomato soup out of tinned toms and balsamic roasted in the oven? It's amazing!

MMM have i ? Indeed I have..
Fresh Vine toms,
peppers,
onion,
Garlic,
few herbs
salt and pepp,
basalmic vinegar,
tin of tom's,
loads of olive oil,

p[ut all of it in roasting tray into oven till blackened and well cooked. Take out and grind through one of them mouli?? thingys. Add creme fresh, basil, maybe a little veg' stock if not liquid enough. Delish..

I like red onions and chorizo fried (can also be as good without the chorizo) . If there's any red wine lying around, add a dash of that. Then a few dried chillies and a splash of balsamic vinegar.

Add a tin of cherry tomatoes (has to be cherry toms). Add 1 tsp of sugar. Squash a few of the toms, leave the rest whole. Let it simmer and mix into pasta with fresh parmesan on the top. Yum!

Any pasta sauce that doesn't involve a tin of tomatoes is a potential friend of mine!

My current favourite =
Fry onions, mushrooms and garlic.
Add white wine.
Add garlic and herb Philly and a splash of milk.
Add chopped parsley and lots of black pepper.
