What side dishes to serve with lamb, ideally make ahead?

I have 15 for lunch on Easter Sunday and I'm doing lamb with garlic and rosemary.

I'm thinking of minted peas as one side dish, plus pigs in blankets and possibly a tray of baby potatoes roasted in their skins.

What else? There will be 6 children of various ages.

Homemade mint sauce

Cauliflower cheese

Carrots

Gravy can be made and frozen in advance

Potato gratin would be lovey, dauphinois or boulangere.

I'd do some kind of nice carrots (drizzled with balsamic), maybe spinach with garlic, and maybe something a bit different like jewelled couscous?
Feeling hungry now!

What about roasted butternut squash? With garlic and honey.

Roasted veg. Can all be prepped ahead of time and then just popped in the oven.

I do braised green beans and tomatoes, which is absolutely delicious with lamb, can be cooked in advance and reheats beautifully.

This is a very similar recipe but I put onions in mine and sub the mint for oregano.

Goes down very well with children too.
