What can I make with four Seville Oranges that isn't marmalade?

Orange and almond cake. I think it's a Mary Berry recipe, but it might be Good Housekeeping. You need to kind of stew the oranges I think.

I've never made it but it's DH's speciality.

Those of you recommending them in cakes, they won't be horrifically bitter will they? Just a bit nervous because my dad accidentally tried to eat one last year and was apparently shuddering for ages Grin

Well, i've not tried seville oranges in a cake BUT i have made a lemon cake using nigella lawsons chocolate orange cake recipe. Substituting cocoa powder for more almond flour. Soooooo tasty. Its a fabulous cake.

Microwave the oranges for about 15mins in a bowl of water, i always turn them halfway through.
