Colourful coleslaw recipe?

I'm looking for a good recipe for a colourful and tasty coleslaw. Something that will go with a baked gammon. Any ideas?

Nigella made one on her programme the other day. Think it had red cabbage, carrot, yellow and red pepper, and spring onions. The dressing was pineapple and lime juice. Not sure about the dressing, seems a bit sweet to me, but it looked very colourful!

Raw beetroot, red cabbage, red onion, apple.
Use a 50:50 mix of mayonnaise and philadelphia.

I was sort of inspired by the Nigella one too. It looked lovely, but like you, I'm not sure about the dressing.

I will try it sometime but maybe not on guests first.

I use regular cabbage, red cabbage, grated carrot, red onion, red, yellow and green pepper. Dressing mayonnaise, lemon juice, mustard and a bit of horseradish.

I'll try 50:50 mayo and cream cheese which a pp suggested, sounds good.

These all sound delicious. I suppose I could take a little bit from each recipe.
