Need gravy recommendations for cooking and freezing

Just leave the star anise out. I wish I had only used 1 SA last year as it was a pronounced flavour; one I like but not with our Christmas dinner. It will have plenty of flavour without it totally.

Yes we did JO but without star anise - really nice.

I make the JO gravy without the star anise or bacon. It it delicious. I've also followed the recipe but used beef bones (and left out the bacon again) instead of chicken wings for a meaty gravy. That was good too.

Oh. And I always make it ahead, in fact I was thinking about making it in the next week or so - it freezes, defrosts and reheats just fine.
