Ideas on using walnuts?!

My lovely mil has sent me 2.5kg of walnuts! Any ideas on uses other than carrot cake? My son can't take nutty things to school and I am going to be barrel shape if I make all cakes. Also how should I be storing them so they don't spoil? I will say I appreciate her hard work - she collected and prep them.

Waldorf salad?
Sprinkled on breakfast cereal?
Served with blue cheese?

If you run out of food ideas, they are great at covering over scratches on woodwork. Just rub a cut walnut on the scratch and it disappears (for a while)...

Walnut and rocket pestoGrin so amazing! Feels like a real treat! Can also put them in a rosted tomatoes version.

Cauli cheese is great with blue cheese and walnuts, also second the pasta suggestions.
You could put some in bircher muesli, or maybe try pickling them.

Leek, feta cheese and walnut tart (made with ready-to-roll puff pastry), recipe should be on BBC site.

Anything with blue cheese, it's a dream combo.

I put quite a few walnuts in this year's Christmas cake. 2.5 kilos might be a bit too much though.

This cake is made of just three ingredients walnuts (loads of), eggs and sugar

Calabrian Walnut Cake (Torta di Noci)

Serves 6 to 8 people
3/4pound (340 grams or about 3 cups) shelled walnuts
4eggs, separated
1cup (225 grams) caster sugar
Finely grated zest of 1 lemon
Icing sugar for dusting

Pulverize the walnuts in a food processor until you have a coarse meal, the texture of sand.
Prepare a round 9-inch cake pan by greasing and lining it with parchment paper.
Beat the egg yolks with the sugar until pale and creamy. Add the lemon zest and walnut meal and stir to combine. Whisk the egg whites in a separate bowl until they form stiff peaks. Fold the whites bit by bit into the walnut mixture until well combined.
Pour the mixture into the prepared cake pan and bake at 375º F for about 50 minutes (190º C 40 mins fan), or until the top is firm and browned nicely. Let cool completely in the pan before removing.


Before serving. Dust with confectioners' sugar or spoon on some rosewater & lemon and sugar syrup.

Make loads of batches of brownies. They freeze well and defrost very quickly when you need them.

blend them until finely chopped but not a powder, and add to flour when baking savoury cheese biscuits or twists as a Christmas snack (really delicious.)

Walnuts are gorgeous in wholemeal bread - really good with blue cheese and apple or just buttered.
