Freeze them. Defrost when you need them and reheat.

Yes freeze them, I always make a big batch and freeze them.

Scoop out the middles, mash and add cheese/ham/bacon/onions etc fill the skins with the mixture and freeze

I often pre-bake half a dozen jackets and keep them in the fridge for up to a week having one for lunch each day - microwave for a couple of mind to reheat. Or you can fry slices as part of a delicious weekend breakfast. Or use slices instead of mash on top of mince for a equivalent to cottage pie. Or scoop out some of the middle to make bowls with 5-8mm of potato and skin all around, fill with grated cheese and bake for a bit, top with sour cream and chives and possibly bacon of you aren't vegetarian or worried about the carcinogens.

Slice and fry with some eggs cracked in for a yummy breakfast or use sliced in a Spanish omelette.

I was going to suggest skinning and slicing them, then add to an omelette with cheese and parsley - I sometimes fry them for a few minutes before I add the egg mixture.

Crack an egg into the scooped out hollow, top with little bit of cream and grated cheese.

15-20 mins at 190C does these nicely when the potatoes are hot to start with. Not sure how long from cold.

If the scooping goes wrong, just decant all the potato into a small dish, mashed, and make a hollow for the egg in that.

Cut them in half, scoop out the flesh. Mix with cheese, spring onion and ham. Fill the skins with that mix and cook for 20 minutes.

Wow! Thank you so much - I had no idea you could do all these things with them. Honestly! It never occurred to me to freeze them or even (I don't know why) to fill their scooped out skins. Why did I never think of it? I think it's bc I had this idea that reheated potatoes are horrid, but that's only if they've been fried, I suppose.

Can't wait to try your ideas - plus now I can see that it actually makes a lot of sense to bake too many and keep them for later. SmileSmileSmile

A sort of bubble and squeak?
Chop potatoes, par boil some Brussels sprouts (or kale, savoy cabbage) and parsnips and fry all together with onions until browned. Just before serving crack an egg and cook til set.

I scoop out the middle mix with flour and salt and make Irish potato farls, so quick and easy and yummy served with eggs
