Veggie meals for non vegetarians

Got three different sets of people round for dinner next week and I'm a veggie and don't want to cook seperate meals... Nor do I want to make/eat the same thing 3 times.

Meat eaters what veggie meals do you like?!

Currently thinking
Gnocci bake
Paneer curry
Spanakopita

Would these go down well?

I'm going to try and avoid weird stuff like tofu and bloody risotto or bloody veg lasagne

Ykes, three different dinner parties is a lot in one week :-)

Do you know the people well? Like you know one set of people loves curry, or tagines, or Greek food or Thai or whatever - then just do a veggie dish that they will like based on.

Personally I love Spanakopita so that would always be a win with me.

I can't get that excited about a Gnocci bake but I'm sure yours is lovely and served with some nice focacia and a salad would be good. You could have antipasti to start with some meat if you don't object to meat in the house. Or just keep it 100% veggie if you do. Top tip - do separate bowls of olive oil and balsamic vin for bead dipping and put salt and dried rosemary in the oil. Another level oil dipping!

I would check that they do like paneer, it is a bit 'love or hate'. Would be nice served with all the usual Indian accompanists and you can buy an Indian starter selection which would make it all a bit easier.

I actually really like risotto so would be happy if that was served!

Baked abergene is easy and always nice - especially if you top with a big dollop of good quality fresh pesto after taking it out of the oven. Serve with something like a wild rice mix and a reduced down tom sauce.

Veggie stuff in filo pastry is a win with me as well. Or puff pastry. Mmmm pastry.

The gnocci i had in mind is for the one I'm most worried about being sniffy about vegetarian food. Seems safe!

Baked aubergine could be a goer!

We had a lovely veggie mousakka this week, made with puy lentils, last night was white pizza with three cheeses, artichoke heats, black olives and topped with rocket once out of the oven, tomorrow or Saturday will be mushroom stroganoff with wild rice

I'm veggie and get nervous when cooking for meat eaters. Despite loving the food I eat every day!

Rather than a paneer curry I would do a mixed veg curry and some dhal. As pp says, not everyone likes paneer, even veggie DH doesn't like the texture.

Veg chilli to have with fajitas is good, with all the accompaniments - guacamole, sour cream, salad, salsa etc.

Or jacket potatoes with a veg chilli, cheese, coleslaw etc.

I have never had a gnocchi bake before, really not meaning to be rude op, just curious, isn't it a bit textureless? In my mind it would be classed as risotto - find for the first couple of mouthfuls and then same same same. But I am willing to stand corrected :)

If by any chance you have Jerusalem by Ottolenghi, I can throughly recommend the chermoula aubergines with bulghar wheat. If you think your guests would like aubergine and middlle Eastern spices, it's a winner :)

Or what about a quiche/tart? Red onion & cheddar, or broccoli & Stilton, or (nicked from the "what should I serve with a tart" thread) caramelised onion & feta?

I'm not totally vegetarian but I'm more comfortable cooking veg food as it always surpasses what people hoped for. If I do meat, it's gonna be dry or raw or burnt or still frozen or a combination of all of those!

My favourite vegan meal is a mushroom wellington. I sauté about 500 grams of mushrooms in olive oil with garlic, then add spring onions. Then drain off the liquid and save it.

Put the drained mushrooms and spring onions in to whole wheat pastry (much tastier). And roll it. I use bits of celery that I've peeled off to hold in place.

Then for the sauce! Add the mushroom juice to a sachet of coconut cream, heat it, add a bit of chilli and 20mls of whiskey.

It's goooooood. seriously.

Foxglove that sounds lovely!

Huevos it is a bit but this person in question (friend of my mums and I feel a bit obliged) is noooot and adventurous eater and it seemed a safe option! (I'm very tempted to just buy them a cheese and tomato pizza if we are being honest!)
