Fool proof Brownie recipe anyone?

I need to find a Brownie recipe that works well. All I want is a gooey middle and slightly crispy outside.

Mine either end up a pile of goo or just cake. :(

This is my first world problem, and I need help! Grin

This one is utterly foolproof and makes the best brownies in the world. I have been using the same recipe for years and they never ever go wrong. I don't bother with the raspberries usually, but I do use really good quality-chocolate.

I use this www.jamieshomecookingskills.com/recipe.php?title=chocolate-brownies Jamie Oliver recipe. Even with Sainsburys basic chocolate they always come out perfect.

Nigella Lawson's one is the best ever, especially if you add 4 packets of M&S white chocolate buttons...and watch the cooking time very carefully, no more than 22-25 minutes in total.

Just use a packet, add water and a bit of oil and cook. Simple but AMAZING

The Best Chocolate Brownies Ever:

(I used to make good chocolate brownies, then I saw the GBBO winner whisking the eggs and sugar in a KitchenAid to make the crust crispy. It really does make a huge difference)

160-180C
25-30 minutes
I used a foil tray bake lined with silicone


185g butter melted with 185g dark chocolate.Cool.
Seive 85g plain flour with 40g good cocoa powder

Whisk 275g caster sugar with 3 large eggs until white and thick.Add a teaspoon vanilla extract.
Fold in the melted cooled mix and the dry mix.

Add 275g walnuts /pecans
100g chocolate chunks (I used bits of mini Toblerone which was lush)

Cook as above, don't overcook, it will be squishy.

And most important.............leave 24 hours before you eat it

If you eat it straight off, it's just cakey. 24 hours turns it into Brownie.

Hummingbird bakery recipe wins hands down for me. Tin size very important though! If they're too thick you don't get the same effect.

I made brownies for the first time in years yesterday using the BBC "best ever" recipe that moab linked above. They are delicious! Worth whisking the eggs separately.

I like Nigel Slater's ones here. I can take or leave NS but these brownies are the best I've made. Cooking time sometimes needs tweaking though.
