i am SO BORED with my family meal repertoire

VolumniaDedlock · 15/07/2015 12:22

can anyone give me some fresh inspiration, ideally with links to recipes, or suggestions for decent books?

My only restrictions are no slow cooker stuff, no risottos, no mushrooms (sadly), only tinned tomatoes (not fresh), no aubergines/pumpkins/squash.

we're not veggie, no allergies, and TBH the DC aren't especially fussy so this should be easy, but I'm totally in a rut. Would especially love more fish/seafood ideas. Please help, before we die of burrito-related boredom.

This is a regular in our house - it's lush: www.bbc.co.uk/food/recipes/tastyfishbake_73312

For very quick I do a lazy fish not at type thing - wilt some (quite a lot of) spinach and drain really well, stick on however many oven-proof dishes, stick whatever fish you fancy on top (we like smoked haddock but have used cod, dab, salmon) then top with a mix of creme fraiche, grain mustard and grated cheese. Stick breadcrumbs on that and ale for 10-15 mins depending on thickness of fish.

We often have a mixed fish platter with a nice salad and good bread - couldn't be quicker. Usually something like some prawns, hot smoked fish and maybe a bit of crab.

Fish baps - dredge some appropriately sized chunks of white fish in seasoned flour (we like a bit of cayenne in there too) and fry I'm butter/oil. Serve in crusty rolls with whatever you like - we stick Mayo and avocado in. Salad alongside.

And prawn Thai curry with a (good, authentic, from Asian shop) bought curry paste.

That's pretty much my regular fish repertoire!

Ooh another - smoked mackerel pate. It's super quick and we have with good bread (we have a lot of bread!) and salad, maybe some shop bought beets, too.

Thanks for these ideas - fish baps is a definite goer.

I have so little to offer other than a lot of solidarity.
I got so desperately fed up (wrong pun as we kept having nothing to eat I was so uninspired) I had a delivery from Cook! to give me a breather. But it's dreadful unless you love cooking all the time and I do always cook for health and gluten free reasons

Red Thai salmon curry - on BBC food
Pizza with tuna, anchovies and chillies
Fish finger sandwiches - I had one of these for lunch today, with lettuce and Mayo

this takes 10 minutes and is a huge hit in our family.

We love this and it's really quick.

Fry 1tbsp Thai green curry paste in 1tbsp oil for 1 minute until fragrant. Add in 1 tin coconut milk, 2tbsp fish sauce, 2tsp sugar and the zest and juice of 1 lime. Bring to the boil and pour over fish fillets in a baking dish (any white fish fillets). Bake for 15-20 minutes until fish is cooked through. Serve over jasmine rice (basmati rice will do). It's nice with asparagus.

Also love Nigella's cheddar risotto with a bit of haddock. Yums.

We like... fillets of salmon, smeared/smothered with pesto and a grating of cheese. Served with homemade potato/sweet potato wedges and coleslaw and peas or corn on the cob.

Saltimbocca looks like its harder work than it is

This smoked haddock Delia recipe is really easy - nice with potatoes and some veg, and this
fish curry is delish.

I often do salmon en croute with a bit of pesto spread on top of the salmon. Plus broccoli and peas. Both my children love it.

We like Jambalaya and use the recipe from the Usborne Cookbook for boys, sorry but can't find a link online.

This is very quick and tasty too, I use smoked salmon off cuts so worked out fairly cheap.

Of you want to have total change, maybe get Jamie's 30 or 15 min cookbooks and just work your way through them? If you do the 30 min one only bother with the main for week nights, don't bother with the puddings for simplification. Both of those books have great ideas in and new ways to eat standard ingredients.

I agree that both Jamie books are great, but leave a good hour to complete a 15-minute meal Wink

Cod wrapped in Parma Ham
Cod fillets topped with a paste made up of sun-dried tomatoes and pesto and then wrapped in parma ham/serrano ham and baked in the oven for about 25 mins until fish is cooked and ham is crispy. I serve with roasted vine cherry toms and pesto mash, but you could serve it with anything you fancy...

Harissa tuna
marinate cubes of fresh tuna in Rose Harrisa (The best one I have found is made by Belazu and I get it in Sainsburys) thinned down with fresh lemon juice, then put onto skewers after 20 mins or so and grill. I serve this with couscous and a chickpea salad (chickpeas, very finely sliced red onion and cucumber, some chopped coriander, salt, pepper, lemon juice and EV olive oil).

Pan fried sea bass fillets
Simply brush with olive oil and season (very easy to cook - take about 6 mins - but very tasty) and serve with roasted veg and sweet potato mash and drizzled with balsamic glaze (not balsamic vinegar!)

It's funny how we all get into these ruts, here I am posting recipes to get you out of your rut and yet I couldn't think of a single meal idea this week when planning my shopping list as I was bored of everything too - hence my visit to these food boards this evening Grin

You said no risotto but do you all eat rice?

If you do, nasi goreng is easy, tasty and filling (my version includes peas and carrots, and the eggs go on, as rolled and sliced omelette, rather than in):

DM used to put ham in hers, rather than prawns.

I've always worked to a rough guide of 30 mins for the 15 book, and 1h for the 30 min book, unless you just do them main and then it's prob 45 mins.

Do you like casseroles/stews? My family all enjoy pork and parsnip in cider, and a chicken one in tinned tomatoes, sweet smoked paprika and a dash of cumin plus veggies. I recently did an easy pasta bake with cauliflower and bacon from bbc good food which went down well. Mild red Thai curry with fish, and fish pie are all well received.

I felt the same way last week and spent a while browsing the BBC Good Food website, always good for inspiration. We liked this tuna tart which seems to fit your criteria.

Also very fond of Delia's sea bass with puy lentil salsa but I massively increase the quantity of lentil salsa.
It doesn't sound like a classically child credibly dish but DS really likes it.

Salmon ( or any fish ) with a crumb top .
Blitz a couple of slices of bread , some cheese ( Parmesan is good ) basil , sun dried tomato, olives , pine nuts ( use some / all or alternatives to these depending on what you fancy ) to make a crumb texture . Sprinkle on top of the fish fillets and grill for 5-10 minutes .
Super easy and super delicious Smile
