Does anyone have a recipe for an amazing gluten free cake?

I want to make a cake for a friends birthday and she is gluten intolerant. I am not the best baker in the world so nothing too complicated but I can just about do a cake - had a look online but would like some recommendations really :)

I'm out at the moment so can't link to it, but I've had good success swapping out the flour for ground almonds in nigella lawsons brownie recipe. I usually only do a half batch as otherwise it makes loads (and I continue to eat them until they're gone!)

I haven't really failed at anything just by substituting the flour in the standard recipe with Dove Farm's GF flour. Sometimes you need to add some milk or other liquid, but even a bog-standard sponge works well. Get the flour and you'll be fine.

this is my mum's GF carrot cake recipe. It's amazing and well used. The only fiddly bit is beating the egg whites. Cream cheese icing is also good!

I make this gluten free fudge cake for my DH. I also made it dairy free for my DD's birthday party as she has a friend who's gluten & lactose intolerant.

It makes a big 2 tier cake so i have transposed the recipe to 2/3 mixture so that i can make a single cake at times.

Google riverford chocolate beetroot brownies. They are made with rice flour and ground almonds and are utterly delicious and rich (esp if you add the recommended Tia Maria) but ever so slightly healthy!

Nigella cloud cake is gluten free and delicious and not hard to make :)

I make this - easy and delicious

Gluten Free Cake:

4 medium eggs
165g caster sugar
225g ground almonds
1 teaspoon baking powder

temp: 170 degree
20cm cake tin
3in deep

Recipe:
separate the the yolks and whites
Add the sugar to the yolks
Beat with fork
should go a slightly paler colour

Whisk egg whites until stiff
(stiff peaks)
Add the whites to the yolk mixture fold in with a metal spoon
Add the almonds and baking powder, fold in everything together until well mixed

Pour into cake tin, bake for 35-45 mins

Serve with fresh fruit and cream :)

Substitute doves farm GF flour for regular flour and add in 1/2 tsp of psyllium husk (from Indian grocers or health food shops) makes a lovely crumb cake.

Nigella is very good at gluten free, her lemon polenta cake is my favourite all time cake, I always have to make sure my gluten free husband actually gets a slice before everyone else scoffs it!

I second the Dove's Farm SR flour as a substitute for 'normal' flour. I've been a coeliac for over 30 years and have made some cracking cakes. Marble cake is good (and easy) - just divide a plain sponge mixture into 2 separate bowls and add cocoa powder (and melted choc if you like). Add to the baking tin a spoonful from each bowl at a time then carefully drag a chopstick or similar a few times through the mixture for the marble effect.

It's lovely either dusted with icing sugar or with chocolate frosting/icing on top.

I'm hungry for cake now Grin

  • Sorry, I meant to clarify adding cocoa butter/melted choc to only ONE of the bowls of sponge mixture!

Nigellas flourless brownies are awesome, and her lemon polenta cake also good- i can do a reasonable "normal" cake with gf flour, but it isn't quite the same.

Is there no gluten in almonds?

If not, another vote for the Nigella clementine cake. Really easy to make and absolutely delicious.

Good housekeeping's gluten free lemon drizzle cake is excellent. And also very easy - my 10 year old under supervision from dh who isn't a cake baker made one at the weekend.

Definitely no gluten in almonds (unless contaminated in manufacture I suppose)

I also once made a lemon drizzle cake from the bbc good food website that uses mashed potato- was good!

I third Dove's farm. I do loads of gluten free baking, some for a local cafe, and I haven't had a single bog standard recipe fail with it. So use any lovely recipe you like, and just use the Dove's farm as you would normal flour.

Oh and don't use baking powder, use SR gluten free flour, or buy Gluten free baking powder as normal baking powder isn't safe for coeliacs or those with a severe gluten intolerance.

looseleaf - its a standby for when my SIL comes ! It came out of an Usbourne childrens cookbook ! - you may just need to check the top, and up the temp a bit to brown it for last 10 minutes - I got a new oven and the temp/time changed :)

I'm gluten intolerant, and have used a few different recipes. Most turn out ok just substituting the flour for GF.

this lemon drizzle has to be my absolute favourite though, if you can get your head around the mashed potato element. Its fantastically moist and very moreish

Does it have to be a cake cake?
I have a really easy no bake can't mess up toblerone cheesecake recipe.
Uses gluten free bourbons for the base.
I'll look it out

The trick is to blend the mixture for a really long time to get smooth, not crumbly.

You could easy get this into cake tins instead, and sandwich with some jam or similar
