How is he with lumps now? Assuming okay you could try finely chopped fish/chicken with mash potato and well cooked vegetables?
Spaghetti bolognese?
Fish pie?
Anything with cous cous?

At this age assuming no issues he can have low salt portions of whatever you eat normally.

He can have whatever you're having minus the salt and made to the consistency he likes whether that be just lumpy or actual finger foods.

Meals with mince and fish recipes are both easy to eat. My DD loved omelettes, cut in strips as finger food. Both DC liked stews at that age, stew beef or lamb for a long time with root veggies and low salt stock, the meat gets so soft it's easy to eat. My PFB DS wasn't good with lumps and I was nervous of him choking, I used to mash food for him and chop things up finely and sometimes blended small amounts of food with a hand blender to make them less lumpy, but they were not smooth by 1 year., for example I did that with the mince from a cottage pie and also gave some veg and mash. I let my DD self feed much more, and also she wanted to feed herself, she would be happily occupied for ages picking up and eating a small handful of peas or chopped carrots, other vegetables. I just put them on her high chair tray and let her get on with it, she liked sucking broccoli and cauliflower trees too. I would often spoon feed her some main meal at the same time. Both DC liked grated things too, apples, pears, cheese, carrots.
