Please inspire me with easy veggie meals that dp could cook. I am so bored of everything!

Any links to tried and tested, straightforward recipes that are not the obvious veggie things, please? I won't eat tinned tomatoes, and d2 won't eat mushrooms or cauliflower, but otherwise we'll try most things.

Things we eat regularly include -
pasta Arabiatta
veggie chilli
veggie spag bol
veggie lasgane
veggie fajitas/burritos etc
curries
sausage and mash
soup
quiche

Please inspire me, so I can inspire him! It needs to be a precise recipe link, rather than a 'Chuck in this and that' type of thing. Tia.

One of the Post Punk Kitchen books talks about putting together a basic meal in a bowl of a bean, a green, a grain, and a sauce, which gives you a lot of room for variation, but can't remember which book, and a lot of the recipes on here are a bit fiddly (also all vegan), www.theppk.com/category/recipe/entrees/ but will try to think about book name. www.theppk.com/category/recipe/entrees/

Home made bean burgers
Butternut squash baked with shallot, put in a blender with a bit of cheese and wizz together, wrap in puff pastry is AMAZING.
Big Greek salads with humanoid and pitta as a lighter meal.

Buy A Modern Way to Eat by Anna Jones and Hugh F-W's veg book for a start off. Getting a veg box will widen your horizons too as you will be forced to look for recipes to use whatever your veg is for that week.

Quinoa meatless meatballs

Leave out the cheese and use 1 egg rather than three egg whites to bind. Use tinned lentils so no mucking around cooking those.
Don't shallow fry, they spit. Brush with olive oil and bake at 180 for 25 mins.
Serve with pasta and a tomato sauce.

Add a red pepper in there too and just use the whole tin of coconut milk.

African peanut stew

I can't eat tinned tomatoes, so the African stew is out. A shame, as it sounds nice.

We have curry a lot, so don't really need any more recipes for that.



Have got, and am completely underwhelmed by, the HFW bok, sadly.

DD2 is not fond of salads - a pain, as I'd happily eat them every day.

Poacher pie sounds really good. The butternut pie also sounds great. Any chance of a full-on recipe, please? Dp needs it all spelled out, step by step!

Can you eat normal tomatoes just not tinned? If so just chop up 4 large tomatoes instead of a tin of toms for the African stew and chuck a bit of extra water in there.

Can you eat passata or tom purée?

Are you quite interested in food or find it a bit of a chore? For new things to cook I generally have a google around vegetarian blogs and find one I like the style of and cook a few things from there.

I can suggest lots of yummy things to eat but not really with links to recipes as a lot of things I bastardise or aplly one concept to different flavours.

Whois - I have zillions of cookbooks and am a decent cook, of the bastardising type. I'm after easy stuff for dp to cook though. He's only recently got into it, and is doing more of it these days, but he needs step by step recipes to follow!

Will try the African thing with a couple of normal tomatoes instead of tinned. I can cope with passata, but would prefer stuff without it. No to tomato puree - hate the stuff!

Useful thread.... DD has become veggie since going to uni and I find it difficult when she is home - I don't like cooking either so find this a real chore.

I've been trying to think of easy things for your DH but most of my go-to easy things have tinned toms in them.

I made a beetroot risotto last week. Was v tasty. This recepie is a close approximation to what I did but add juice of half a lemon at the end. I didn't add cheese.
No way 150g risotto rice does 2 adults of its your only dinner food item so I would double this recepie (but just keep it to 1 large onion and probably not double the beetroot).

This is really nice. Nicer if you use veggie feta in place of the tofu but my DP won't eat cheese. It is quite time consuming but it is easy. Also add 1 tablespoon of dried oregano to the mixture. I didn't add the nutritional yeast as I don't like it.

I added a tin of chickpeas, and had to add a bit more water. I upped the preserved lemons from half to 2. I also upped all the ther spices and herbs and the garlic but I'm sure it would be nice as per the recipe

Ok I would say this is easy, but it is a bit time consuming. To make it easy, make the sauce the night before and buy the pre-cooked polenta so it's just an assemble job on the day. The sauce is v tasty (and fresh not tinned toms!). I didn't bother with the bean salad, just a bit of green salad.

I make something like this quinoa salad, but I sometimes add a boiled egg & a drizzle of olive or hemp oil. It will keep a day or two in the fridge, so I make plenty as I can take the leftovers for lunch.

Sandwich filled with hummus, pesto, & tapenade. Almost instant.

Another Vegan Stoner link - carrot scramble. How does your DH feel about tofu? I've started making this at least once a week because it's amazing and absurdly easy. I grate all the carrots in a food processor and add a couple of tablespoons of tahini.

Gnocchi pesto soup - not much chopping, and mostly just chucking stuff into a pan in stages.

I've recently made up a batch of pasta 'sauce' for want of a better word, using sliced garlic (jar variety), sliced artichoke (also jar variety - both from Aldi), chopped red onions and fried together with rapeseed oil. Salt and season and add to whatever pasta you like. Considering adding some sundried tomatoes next time or olives. I've frozen this well too Smile

Salad that isn't mixed up eg bread, cheese, fruit, carrot, cucumber, red pepper, hard boiled egg etc
Lentil soup in winter
Omelettes
Baked eggs with spinach
Egg & chips
