Ideas for vegetarian mains for guests

I have a supper club and it's my turn next. All veggies.
We almost always seem to end up having something with rice so wanting to do something different.
Any ideas?

My DH loves a salad I make in which I bake chunks of sweet potato with about three or four garlic cloves cut up...oil, salt and pepper...then mixed in a big dish with sweet peppers, spring onion, lemon juice, fresh herbs and tomatoes.

Aubergine Parmigiana using a substitute for parmesan as parmesan cheese is not vegetarian. Tesco do a very good parmesan style hard cheese made with vegetable rennet. Serve with crusty bread and salad.

My go to casual feed many meal is fajitas. I do a mixed bean chilli, big bowl grated cheese, salsa, guacomole, shredded lettuce, sliced peppers, sour cream, chicken and steak (obviously could be replaced or just left off the menu)

You can also do jacket potatoes for those avoiding wheat and a bag of nachos for the grazers.

If I'm feeding quite a few people I feel its the sort of meal everyone can eat something at. One person may have chease and bean fajita whilst another might have a cheese jacket

Get a loose bottomed cake tin. Line it with filo pastry. Mix up feta cheese, pine nuts, spinach, an egg and other stuff (chick peas can be good). Put in cake tin. Fold the pastry over the top and bake.

Vegetable puff pastry pie and veg

Veg tapas- tortilla, grilled halloumi, roasted peppers etc

Red pepper and butternut squash lasagne with a side salad

Mushroom stroganoff with potato wedges

Cheese and potato pie

Chickpea and aubergine tagine with Cous cous

Dhal and flatbreads

Veg fajitas

Veggi lasagne, or a tomato/garlic pasta.

Homemade bean burgers/falafels

Mexican/chilli in wraps made with quorn or beans

Sweet potato and chickpea curry

A salad with loads of 'bits' (quorn chicken fillets cooked and sliced, apple/grapes and cheese, waldorf salad, humus and carrots etc)

Couple of different curries with a selection of breads, pakora, minty yoghurt and cucumber and onion salad.

Tagine and cous cous

Chilli, cornbread, salsa

Quche, roasted garlic new potatoes, salad

Veggie lasagne and salad

That filo pie sounds so good....especially if you added some olives....mmmmmm think im going to the shop on the way home!

I forgot to say about the filo pie that you will need to save a couple of sheets to make a lid.

When you fold it all over it looks all crinkly and very clever.

Brush the filo with melted butter and it will look and taste extra gorgeous!
