I'd make mini Victoria sponges...vanilla cake batter in a big cake pan, only an inch thick though. Then using a round biscuit cutter, I'd cut circles out and sandwich two or three together with jam and cream.
Mille feuille...buy ready made puff pastry and cut into small rectangles and bake. When cooked sandwich together with crème patissiere (I'd buy it rather than make it!) Drizzle with glace icing.
