recipes to use up white wine.

I have been given a couple of bottles of white wine for my birthday that I can't drink with my antidepressant tablets.
Any ideas on recipes that can use them up? (preferably simple and cheap ones).

I'm assuming that alcohol disappears when you cook with them.

I use up white wine when cooking fish, either for poaching, or instead of water when making up stock for soup, stew or pie-filling.

Chicken casseroles are good with white wine in. You could make sauces and freeze them too.

I'd probably find a friend who likes white wine and re gift tbh or get them to buy you something non alcoholic as a swap

Most of the alcohol evaporates when cooking. It takes about 20mins cooking. Certainly enough alcohol evaporates that I would have no hesitation serving it to a young child. If alcohol is simply 'not advised' with your ADs, then a dish cooked in wine for 10-20 mins would be fine. If OTOH alcohol is strictly forbidden, then I don't know for sure whether it would be OK.

White wine is great added when cooking a risotto.

Another vote for risotto. Chicken stock, white wine, lemon juice and zest, fab with roast chicken (just pour juices you'd usually use for gravy into the risotto at the end rather than adding butter), serve with rocket salad, brilliant and simple way to do a summer roast.

Nigella's Greek Lamb Stew is gorgeous and uses a whole bottle of white wine.
