Risotto.

Have some veg to use up.

Onion, mushrooms, peppers & courgette.

would pepper & courgette go in a risotto?

If not, any other ideas for using up the above?

pepper not so much but courgette yes. Salady starter with pepper if you can be bothered?

Red pepper and goats cheese risotto is lovely. Courgette also good.

A version of huevos rancheros. Fry onions, garlic, peppers,courgettes, mushrooms (not usual but it'll work), add a whole chilli or pinch of dried chilli flakes, add cumin and smoked paprika (or other spices you like), add a tin of chopped tomatoes and cook a little. Make 2 (or 3,4) holes and break eggs into it. Ideally cook until whites set but yolks soft. A pan with a lid is helpful. Chopped parsley nice at the end if you have it in. Serve with bread or toast. Good for brunch or supper.

Yes it was the pepper that I wasn't really sure of.

Salad wouldn't be too much trouble.

Like the sound of roasting it to use in a risotto though!

Hello again!

well, didn't quite get the timings rights, so we had roasted pepper, courgette & red onion for starter, followed by mushroom, onion, courgette & tomato risotto.

was delicious!
