using up white wine

I have opened what used to be a very nice white, which had been mislaid in a cellar corner. It is not corked or spoiled, just old and not very nice.

I have it in mind to use it up in a cooking sauce.

Any suggestions?

Well white wine and chicken always seems a good combo. I don't have a particular receipt but I would be looking up coq au vin (not sure if that's the right spelling!) or some kind of chicken casserole. Could also use in gravy or pasta such as carbonarra but they won't use as much.

Freeze it in ice cubes to add to sauces as and when.

If you freeze it, remember to label it clearly and tell your nearest and dearest, or they WILL use it in their apple juice and ask you if the juice is off as or tastes funny.

Add a splash of cassis (or any other sort of fruit liqueur) - the most 'ordinary' wine is much better as a kir!

I think I have a recipe somewhere for 'coq au riesling' but I've never actually tried it...

Do not use any wine in cooking you wouldn't be prepared to drink (or it will taste horrible!) Cooking doesn't make old rubbish wine nice! Down the sink I'm afraid.

I don't like wine at all to drink but I do use it in cooking, a splash in a risotto is always good, or a seafood pasta dish.
I'm doing scallop and artichoke tagliatelle tomorrow which will have wine in.

If it's not good enough to drink then tip it out, cooking with it will just spoil whatever you add it to.
