your best one pot dishes please

I am finding cooking for the family a bit much at the moment with lots of other stuff going on at work and home. Anyone suggest heir best one pot dishes please - ideally something with meat and veg in it that can be bunged in casserole dish and put in oven and come out cooked - ideally no pre casserole dish browning or frying over or other stuff. Don't mind if it has a carb in it or needs carb as a side. Hugely appreciated...

Chicken Marbella - put uncooked chicken thighs in dish. Sprinkle some prunes,olives, garlic cloves and capers over them. Pour 3 tbsp olive oil, 3 tbsp red wine vinegar,and 3 tbsp of the liquid from the capers jar, over the lot and pop in fridge overnight. Next day, just before cooking,add 120ml of white wine and sprinkle some brown sugar over it all. Pop in oven for 50 mins at 170. So easy.

I do this in the slow cooker so use less stock than if doing it in the oven (I use about 150ml). Chicken thighs with chopped onion, celery, carrots and any other veg of your choice, pour over some chicken stock, cook until done, before serving stir in a splash of double cream or a blob of crème fraiche

Lemon garlic chicken. Chicken thighs brushed with olive oil, sprinkle salt and pepper. Put in roasting tin with cloves of garlic and wedges of lemon. 1hr on gas mark 4.

Extremely thick lentil soup with real ham or lots of bacon and chunks if carrot always feels like a substantial meal. Fry onions, bacon/ham, carrots and add chopped tomatoes, lots of lentils and even potatoes for extra thickness. Always goes down well and fills you up with or without bread on the side, lasts a couple of days and freezes well too.

Chicken, chorizo and pepper bake. I bung chicken thighs, some thick slices of chorizo, chunks of red pepper and either wedges of sweet potato or butternut squash in a roasting tin. Drizzle olive oil all over, add salt and pepper and a tsp of dried herbs like oregano or thyme plus a squeeze of lemon juice if you have it. Mix it all up so everything's coated. Plonk the chicken on top of the veg then roast in the oven for 45 minutes at gas mark 6.

Mince with dumplings.

I make any mince meal with minced up carrots, mushrooms and lots of onions. Courgettes if I have any, plus a handful of red lentils.

Cook it all up, once the meat is ready, you just need to make the dumplings and bung them in the top. Delicious.

Another chicken thigh fan here.

Very simple but deeeeeeelish casserole:

Six thighs
Chicken stock
Herbs etc
Chunky chopped carrots
Baby potatoes, halved if whole
Garlic
Leeks
Tablespoon plain flour
Frozen peas

Quickly brown chicken in pan with garlic. Stir in leek and flour. Ad stock and veg. Simmer for 30 mins. Add peas. Simmer for five more mins. Devour.

Stewing steak, onion, mushrooms, aubergine all chopped up. In a casserole dish with tin toms, beef stock cube, bit of sugar and any herbs. Cook slow and low. I serve it with rice but it would go with jacket pots or if you upped the liquid you could chuck in some pasta and turn it into a bolognase type meal.

Skinless chicken breast, pint chicken stock, tarragon, one large tin new potatoes, sliced carrots, peas, all in a casserole until chicken cooked, 35-40 mins max. Serve with a dollop of creme fraiche. (add carrots, pots peas later so they don't go to a mush).

I often do a batch load of fried onions for anything that needs onions and freeze in pots.

One good one is frozen fried onions, can tomatoes, frozen white fish (any, one piece per person) chorizo, chilli flakes to however hot you want - cook together till fish cooked, serve with one hard boiled egg per person and basmatti rice and chopped coriander (optional).

Tray airs generally are great. There's the Nigella one with chicken thighs, baby pots, chunks of chorizo, add the juice and zest if an orange, bake for an hour, giving it a wee baste half way through.

I also do a sausage one, pots and venison sausages with some oil and garlic (or any sausages really, I just like venison ones), bake for half an hour, then add some peppers, leeks, chunks of onion and a good shake of Worcester sauce, give it all a stir and bake for a further half hour.

Easy.

I was going to say that Nigella chicken and chorizo. Tastes and looks amazing. However I make it with rice now ( risotto style) as you use half the ingredients and it makes twice as much. Poor this month.

I put pork chops, sliced potatoes, fennel, carrots, mushrooms, yellow or red peppers, garlic, thyme, S+P, cup of water in a roasting tin, and seal it with foil over the top. seal the foil well and put it in the oven. bake for 40 mins, take foil off and bake for another 15 mins to brown off and serve. Ive done it with chicken thighs and lemons, and lamb chops and mint. Really succulent and tasty. Smile

If you are on Facebook look up Stephanie O Dea she blogs on slow cooker recipes which are all fast and really nice, She is my new go to for meal plans and ideas
She even does lasagna in the slow cooker and it is lovely
Like a PP I also prep and cook off onions, leeks, peppers, carrots and freeze for use on busy days

Skin sausages and wrap in bacon. Chuck into casserole with roughly chopped onion, apple, and top with sliced floury potatoes. Pour in a pint of rough dry cider, dot top with butter. Into oven at 180, baste after 40 minutes, uncover and let brown. It's done when the spuds are soft.

Mine is a wok/frying pan recipe but once you have browned the chicken breast it is a leave it to simmer recipe.

Brown chicken breast in pan.
Add chopped red or yellow pepper, toms, courgette, onion and chicken stock.

Add garlic and herbs.

Bring to the boil and then simmer until thickened and cooked.

Sliced aubergine, toms and mozzarella layering a dish and sprinkled with oil then debarked in the oven is also quick and easy for a lazy tea.

I take the wire rack out of the grill pain and put in salmon pieces, a couple of finely sliced leeks, diced red peppers, sliced mushrooms and sometimes courgettes diced, finely chopped garlic, S+P, freshly squeezed lemon and olive oil over the top. I then grill it slowly, turning the fish and veg and allow every thing to crisp off slightly. I serve on basmati rice, and it makes enough juice to be moist not dry. Really tasty!

Place marking Smile I actually cook quite a bit in one pot/slow cooker, but can't bloody remember any of them! Will post again when brain kick starts.......
