Best way to temp store pre cut swede & celeriac?

I want to use 1/2 swede & 1/2 celeriac for mash with our roast this evening, then use the other halves in a slow cooker casserole for Tuesday evening.
Can I just dice the casserole halves and leave in water in the fridge til tue morning or is there a better way?

I tend to use half, the wrap the other half tightly in clingfilm, then keep in salad drawer. But if you are using it on Tuesday, it will be fine , and its already prepped!

That was the idea, prep today when I have the time so can be thrown on the sc tue morning. Was just a little concerned that 36+ hours in water may affect the veg somehow smile
