Stuck in a lunch rut with my 1 yr old!

Hi all, happy new year!

As the title says, I'm feeling really stuck for lunch ideas (DS is 15 months). I've got into a rotation of scrambled eggs/omlette, jacket pot and beans or a cheese sandwich. Not massively inspiring and wouldn't mind upping the veggie intake. Desperately in search of quick, easy and healthy ideas - please do bung some my way!!

I stir fry courgettes, peppers, onions, sweetcorn, peas, mushroom etc (whatever I have) and boil some red split lentils.

Drain the lentils and add passatta and the stir fry and fresh herbs and give a quick whizz with blender - have pasta or Rice with it

I think it's good to get the veg in that way

Otherwise I do meat and two veg type dinners (mash carrot broccoli and bit if meat left from night before)

Ratatouile

I make a chick pea type of thing with garlic, lemon and tin of chick peas and have with oat cakes too

I find lunches hard too. We do a lot of 'bits and bobs' - sticks of cucumber/carrot/cherry toms, hummous/guac, breadsticks/oatcakes, cold meats, cheese. They like to pick and choose at the table.

Also soups, is messy but DS loves dipping his chunks of bread.

Dippy eggs? Homemade pizza? Cheese on toast with toppings eg pesto, grated apple mixed in etc

Today I did Annabel Karmel sweetcorn fritters but added some spinach and grated beetroot to up the veg content. She wolfed them down!

Made loads so could freeze some for another day.

HM falafel, arancini or fish cakes?

Toasted panini with roasted veg?
Hummous and crudités
Veg soup and bread to dip
Eggy bread
Hard boiled egg slices with salad and bread and butter

Thanks so much! Feeling much more inspired. Thinking if I get a load of veg in, I can roast up and serve in different ways. Love the fritter idea too. Smerlin-how many does your DC eat?

MrsGrumble I'll be trying your pasta sauce, thank you. Do you cook up the garlic then whizz with chickpeas and lemon? X

This is what we do every day. We call it a picking plate. I am in a rut too! Need to start meal planning including lunches...
