I will probably have a hangover to boot as its New Years day.ive decided to do roast beef and shall be cooking it in the slow cooker. But as for the veg and potatoes I don't have a big cooker or a lot of space in the kitchen so will be in a mad panic!!! Is there anything I can pre-cook, prepare without ruining the dish???

Lots of veg are good cooked in advance and just re-heated, swede (and carrot) mashed with butter and pepper and braised red cabbage spring to mind.

If you have a microwave then you can buy bags of ready prepared veg such as broccoli that you can just "ding" in a few minutes on the day. I agree with Chewbecca about preparing some veg such as carrot and swede mash and just reheating it - again you could do this in the microwave. I would use the veg water to make the gravy ahead of time too and just add the meat juices on the day.
