What to serve with dark choc and marmalade ice cream?

Ds really wants this as his Christmas pudding, I'd like to serve it with something else but what...shortbread might work for texture. Any other ideas? Would adding ginger in a biscuit be too much?

A plain chewy style cookie might work - maybe an ice cream sandwich, but the danger is introducing one flavour too many.

Have never made brandy snaps - I bet a caramelised sugar basket would work the ice cream isn't very sweet but I'm not sure my skills extend that far.

Thanks for your suggestions, I think some sugar work - basket style is probably what we'll go for, just because I fancy experimenting and DS will love the whole effect, but still thinking about making brandy baskets too....we don't have guests eating with us, so no need for politeness or a perfectly turned out result.

I'd echo the crunchy biscuit type recco, either a plain or a choc shortbread would be what I went with, I think.
