Vivaldi potatoes, cut up fairly small, very quick par boil then roasted in olive oil.Thinnish cod fillets lightly wrapped in smoked streaky bacon laid on top of the potatoes for the last 20 mins cooking time.Some roast cherry tomatoes and fresh green beans as sides.
Only thing is I sometimes find cod gives off quite a bit of water so would be tempted to cook it in a separate dish.
I'd cook the fish separately too, also tomatoes can give off a lot of juice so maybe do them with the cod not the potatoes.
Ah bum. Was hoping to save on washing up and do a sort of cod tray-bake a la Nigella.
Wrap the cod in foil to bake it with the tomatoes and some garlic, that will save washing up a fishy dish.And you need with it!
