using mini morsel/muffin tin pastry related

Hi

got this from lakeland. some success but often things getting stuck in tin etc. Using ready made shortcrust. Want to make mini quiches and have done some which were ok ish

Would you blind bake first pricking pastry then add filling?

Do you grease tins beforehand?

I gave up with the dobber as I found I got a better result rolling out pastry etc

Any thoughts

also quiche fillings are helpful

baking for dds key of the door family party next week so will freeze them.

the quiches were ok. i also made red onion chutney & goats cheese. i think the problem arose when the filling bubbled over a bit.

greasing is the key i think

Ah now, greasing is what has caused every batch of Nigella's mini mince pies to stick every time I've baked them (...at least 7 or 8 years!). Last year it suddenly struck me that the recipe doesn't mention greasing the mini tart pan, so I didn't and "Voila!" all mince pies departed from tin sans breakage or sticking!

I was flicking through her Christmas book today & noticed I had written a reminder to myself for future years Wink
