How to make my own frozen veg...

soffitto (sp?), finely chopped carrot, onion and celery ? I always have a bag in so handy for soup/pasta sauce/cottage pie when time's short but M&S have stopped selling it and I haven't managed to find it elsewhere. Looking forward to a mammoth chopping session but I have never prepared veg for freezing before and wonder if anyone has any advice?

I've never blanched a vegetable in my life.
