Any interesting veggie meals?

Looking to expand my veggie menu ability! So looking for veggie meals that don't use a meat substitute, with fairly 'normal' / cheaper veg. Any and all ideas/ recipes welcome! :)

Roasted veggie lasagna

Lentil 'shepherds' pie

Root veg stew and dumplings (no suet)

Mostly I go for curries, though:

Chana (chickpeas) and dhal (lentils) both easy to make
Bombay potatoes or aloo gobi (potato & cauliflower) both delicious

Chickpea and sweet potato tagine is easy and quick

We just had baked sweet potatoes, cauli cheese and peas and sweetcorn. Twas lovely. Not particularly nutritious though. If I'd had any veggie sausages in the freezer I would have served them as well but it honestly didn't need it.

veggies and butter beans in white sauce. (use veggies you like I use leeks, onions, broccoli, peas, sweetcorn, mushrooms, courgettes.)

lentil bolognaise,

lentil chilli (not con carne obviously)

red sauce... which is loads of different veggies, a couple of sorts of tinned beans in a garlicy chopped tomato sauce. (lots of carrrots as they are cheap. )

green soup that came out of my head today :)

broccoli
kale
spinach
5 garlic cloves
red onion
1 l of veg stock

bring to the boil...turn the heat down and simmer for about 10-15 mins.
blend it...plenty of black pepper and a bit of cayenne pepper.
it was delicious and not to mention how nutritious ;)

I'm a pretty terrible cook, but find that those bags of frozen veg you can buy for roasting are great in most curries. There's something about the consistency that just works well. I tend to chuck mine in the slow cooker with a jar or packet mix

Homemade pizza with squash, rocket, walnuts, and blue cheese

Paneer Makhani (paneer in a mildly spicy creamy tomato sauce)

Spicy bean tacos

Quinoa/bulghar wheat/pearl barley salad with rocket/spinach/coriander/kale/roasted peppers/olives/sundried tomatoes/apple/walnuts/sunflower seeds/sundried tomatoes/feta/halloumi/dried cranberries - any mix

Salad of roasted sweet potatoes, black-eyed beans, sweetcorn, kale, and smoked tofu mixed up with Greek yoghurt, mozzerella, and goats' cheese (much nicer than it sounds!)

Pasta with homemade pesto and slow-roasted tomatoes

Chakchouka - basically oven-roasted tomatoes and peppers with eggs cracked and baked into wells in the veg

Carbonara with smoked tofu instead of bacon

Kale and fennel lasagne

Leek and mushroom risotto (with goats cheese if feeling posh!)
Veggie Chilli with any veg - maybe onion, mushrooms, peppers, courgette, various beans etc
Soup - spicy butternut squash and sweet potato is a winner!
Falafel - v. easy recipe you should be able to find online from jack monroe - have with pitta/hummus/salad. Yum.

We eat this kind of thing constantly and aren't a vegetarian household - saves us a fortune :)

Actuality the Jack Monroe book has lots of good and cheap veggie meals in it! Has a nice peach and chickpea curry in it!

My XP was staunchly vegan. DH is staunchly carnivore, & one of the few recipes that I have made for both is a summer vegetable minestrone with whatever vegetables are tasty & cheap, plus either mini pasta or tinned cannelini beans, and a swirl of vegan pesto. Serve with your favourite Mediterranean style bread for a more substantial meal.

Ottolenghi does a great veggie book. I love his honeyed sweet potato, chickpeas and yoghurt sauce - carb heaven!

This is so fantastic, thank you so much for the varied responses! I've always struggled with veggie food, as you normally use a lot of what is class as 'filling stuff' (potatoes, beans, pulses etc) in the dish to bulk it out then I get confused as to what to serve it with as no one wants too many carby items on a plate!

Vegetable crumble - loads of cooked root veg in a thick stock with a crumble of herbs, cheese and breadcrumbs.

Chick pea and roasted squash stew with tomatoes, chilli, paprika and tons of garlic. You can use Harissa paste with it too.

Garlicky stuffed mushrooms (with tomatoes, cheese and breadcrumbs) served with new potatoes and salad

Favourites in this house are

Lentil dhal with warm chapattis
Gnocchi pesto bake (so easy - roast whatever veg you have to use up, boil your gnocchi, stir through vegetarian pesto, top with breadcrumbs and grated veggie Parmesan and bake - gorgeous!)
Chilli with veggie mince and baked potatoes

DH is non-veggie but loves all the above!

Thought of another favourite! Easiest curry in the world - onions, garlic, tikka paste, can of chopped tomatoes with chilli, couple tablespoons of mango chutney and chuck in whatever veg you have to use up - amazing and even better the next day! :)

Re what to serve it 'with', OP, have you thought of:

couscous - either plain or lightly flavoured ie lemon and coriander
wild rice
chappatis/paratha/etc
rocket
sweet potato chips
slow-roasted tomatoes (these satisfy a sweet tooth too!)

I love lots of finely chopped Mediterranean veg and pine nuts, which I fry lightly, then put in a bowl, add some couscous, chopped dried apricots and boiled water to cover. When the couscous has cooked I add some chopped avocado and either some feta or grilled halloumi.

And my favourite lentil stew:
Cook basically any veg - I prefer leeks, courgette and pepper with some garlic and ginger - in a bit of butter, chuck in a load of dried red lentils, add water, simmer until the lentils are cooked. Comfort food :)

Mhm these sound amazing! Going to give a few a go over the next few weeks I think! Trying a new thing ATM where I cook a new dish once a week to expand my abilities!

Thanks to whoever posted the list of what carby bits/ carby replacements there are, very handy!! :)

roasted veggies spread on a sheet of ready rolled puff pastry dollops of riccotta cheese and a sprinkle of cheddar and cook... delicious and easy but looks posh.
