Can I make my own pot noodle for lunch at work?

As in, can I put something together in a tub, take it to work and then add boiling water and several minutes later, have something healthy and warm to eat?

Will any sort of noodles cook in boiling water from a kettle? Or do they really need to be done in a saucepan?

And how might I flavour it? thinking of a bit of stock cube but that's a bit salty.

I'm thinking I could just add a load of beansprouts and thinly sliced pepper for instance. Which don't really need cooking.

What do you think?

And will I just end up schlurping noodles across my chin and dribbling sauce down my top??? Confused Blush

Yes. Quick noodles will cook if you soak them in Boiling water for a while. You can do this just before eating or I soak them when I have my breakfast and then drain before putting in the pot. (Probably not needed but as I work very part time I only have a fifteen minute break so saving a few minutes helps). You can add a pinch if stock powder, miso soup powder or some soy sauce along with grated or shredded veg. I haven't tried beansprouts but I don't see why not.

I do couscous the night before. I put a bit in the lunch box, cover it with hot water then add the salady stuff the next day. But that's cold. And salady. I'm starting to hate tomatoes and cucumber almost as much as bread.

I guess you could just put it all in and then add the hot water when you want it.

What would you put in with it?

And protein.

What do you do about protein?

We only ever seem to have ham or tuna to hand and that not very inspiring either.

You can get rice noodles to which you just add boiling water, and they are ready in 3 mins. You could make up a pot of stuff to put in it - some red peppers, broccoli, spring onions etc, and use a bit of stock powder. I'm sure it would be lovely.

FWIW, when I was much younger, I back packed around China, and ate noodles all the time. I had an enamel mug and chopsticks, and you could buy noodles with a small sachet of flavouring all over the place. The trains and hotels/hostels all had boiling water available, and it was an easy way to get a meal. (Not every meal, but quite a lot, when travelling.)

Sorry, I missed the protein bit with my reminiscences.

What about some cold roast chicken? It would heat up in the water. Tofu, if you like it. Some cooked prawns might be nice?

I make up a vat of something each week, this week's was Mexican sweet potato chilli, next week is split pea dhal, and we use a sistema soup mug to take lunch in. It's a layer of frozen rice, a layer of the meal of the week and a layer of fresh spinach leaves or mange tour. Microwave for 4 minutes and you have a hot nutritious lunch.

Have you tried miso soup? It comes in little sachets and you have it with rice noodles, chopped spring onion and red pepers and add tiny bits of ham.

I'd be tempted to empty a sachet of miso soup into the kilner jar instead of the veg stock cube in HF-W's recipe...
