Lebkuchen

I fancy making some lebkuchen (never have made before, just eaten them!)

I have found loads of recipes online, but there seems to be quite a variety so can anyone recommend one, please?

I also fancy doing some. There are various recipes on the web, & from what I gather, you need potash (potassium bicarbonate) as a raising agent if possible. It's not especially easy to get hold of in the UK, especially if you don't live in London. There's a German deli in London that sells it but the postage is something like £6 per order, the sachet of potash is only about £1. Can also get larger packs on amazon/ebay but it's way more than you need for lebkuchen unless you're making them to sell...

I did find this recipe a couple of weeks ago but haven't had time to try it yet.

Hopeful bump for the morning crowd & any other recipes?

I ditched the Lebkuchen idea and made a ginger cake instead

Just seen this thread. I use recipe for lebkuchen by the pink whisk. Easy.
