I have 16 eggs to be used by Wednesday. Ideas??

Just that really! Any bright ideas on how to use them would be great, other than the biggest omelette in the world. Things I can freeze would be particularly good!

They'll last longer than the date on them - do you know the floating egg test? They're fine as long as they sink to the bottom of a cup of water.

But chocolate brownies have lots of eggs in too. Or make and freeze a quiche?

Is that because the use-by date is Wednesday? Because if that's why I'd say 'don't bother', the use by dates on eggs is a joke. They last weeks longer than that. To test if they're still ok, put them in a jug of water, if they float they're off.

Frittata, I'm not sure if that can be frozen though. Scrambled eggs on toast every morning for breakfast. You need 2 eggs to make a decent amount of breakfast.
There must be a cake that uses a lot of eggs but nothing springs to mind, maybe brownies.

I was going to suggest a frittata too. This one uses up 8 eggs and it's delicious. I use salmon trimmings to keep it cheap.

You can freeze the whites - I defrost as required to make pavlovas, meringues etc.

But yes, egg expiry dates mean bugger all, really. You can certainly add a fair while to them.

Definitely frittata for eating now, or cake for freezing. Lemon drizzle cake is a good one.

Make real egg custard and freeze it for Christmas.

Scrambled eggs on toast (be rude not to)

Chocolate mousse

Egg fried rice (can freeze) and very delicious homemade

Spinach and feta tartlets

I love eggs Grin

If you separate the whites and yolks they will freeze separately. You can then combine for cooking or use for meringues, custard etc.

Wow thank you, that was quick!!

Um they have to be used by Wednesday as that's the use by date... But I can see I'm clearly being daft and gullible! I never worry about sell by dates on veg and cheese etc, but I guess I'm always really worried about meat and eggs!

Didn't know you could freeze quiche, that's a great idea. Or freezing the whites for meringue. Can you freeze lemon drizzle? Any anyone got a nice recipe?

Can you freeze pancakes?

Yes, you can freeze pancakes. I can get through masses by having two a day for breakfast, one hard boiled in my lunchtime salad and a bit of baking, I love eggs and have two neighbours who give me them in return for empty boxes.

Use by date is balls - do the floating test. I reckon you have at least a week maybe two

Also eggs can be frozen raw, just break them out into an ice cube tray

Make cake sponge, can be frozen
Omelette for dinner
Meringue (whites)
Mayonnaise (yolks)
Custard (yolks)

If I have 6 eggs to use up I make the following 2 dishes:

Sticky onion tart (used yolks)
Hazelnut pavlova (uses the whites)
No waste!

For clarity the float test = the older the egg the more air permeates shell (or something like that) so if it lies flat in a bowl of water it's fresh, if it tilts a bit but is basically low in the water a little air has entered, but if it floats, then the shell contains more air.
To be sure break an egg into a cup and sniff it before adding to anything and remember a best before date isn't the same as a use by date.

I like baked eggs with spices and chorizo. I make a ramekin of potato rolled in a curry spice mix, cooked peppers, chorizo and cooked onions, sometimes I added chopped corned beef too. Warm through in the oven and when hot make a well in the centre and crack in an egg. Return to oven to bake egg.
You can add things you like e.g. tomato wedges and you can leave out what you don't fancy.

Eggs can last for months, ignore the use by date. You can also freeze whole eggs but you need to stabilise them with something - I think if you intend to use in sweet things you add a spoonful of sugar and gently mix up the yolk and white, and for savoury add salt.

Brilliant, thank you all. Feel daft for having chucked out so many eggs over the years which have only been a day or so out of date.

I'm good at meringues Germs, easy peasy Grin.
