Hello, I want to make a beef casserole for my 7 month old baby and have previously just used Annabel Karmel recipes.
I'd like to not follow her recipes this time but am just wondering can I put all the veg in at the same time? I am asking because last time I decided to add some carrot to a beef and sweet potato recipe the carrot was too hard, even though it had cooked for a couple of hours. I'm sure I made a lamb stew once where all the veg was cooked together and it was great, floury potatoes, tender meat and soft veg.
I have the beef, potato, sweet potato, carrot, parsnip, red and white onions and garlic to hand as well as oil, baby veg and chicken stock cubes, tom purée and passant and flour if needed. Can get herbs. Has anybody got an easy method for a useless cook? I don't mind starting it off on the hob and transferring to the oven if that is best.
I am a useless cook, I tend to panic about it drying up but I've read it's better to let it cook for longer than the recipe says to get the meat tender - if so do I just add extra liquid from the start or keep checking?
