Secret ingredient in your burger mix. ..

My dh bought me a lovely burger press, which I'm going to play with tonight. If you make home made burgers, do you add anything extra to the meat?

Grated carrot and apple and fresh herbs. (Squeeze juice out the apple though) and of course onion, mustard seasoning etc

Nigella's burger recipe

250g lean mince, 1.5 teaspoon each of soy sauce, low fat yoghurt, worcestershire sauce, 1 tablespoon caramelised onions (from a jar) and a good grinding of pepper. Mix it all together, make burgers and fry off. I use a good non stick pan and I don't need to add oil.

def cheese in the middle - we use goats cheese. also some mango chutney in the mix.

Tomato purée and chopped roasted red peppers from a jar.

Smoked bacon lardons, cooked red onion and lots of dried herbs de Provence.

Has anyone said oats yet? A handful of rolled oats soaks up some of the spare juice.

Taste is in the beef, you need a cut with a bit of fat in it for taste. Best to get butchers to mince up the right mix for you rather than buying minced meat. I just use finely grated onion, a bit of water and seasoning.

Tallypet, when you say relish do you mean posh burger relish or good old Hendersons Yorkshire relish?
