Ooh also, one pot chicken dinner. Cook chicken in a frying pan with stock, add peas, broccoli, onion, veg etc then sliced par boiled potatoes at the end and pop in the oven for a bit. Just sit and let it cook, chucking in the odd ingredient. Think there is a recipe for it on the Jamie Oliver website under French food.
Roast sausages and veg- shove cubed veg- peppers/squash/carrots/potatoes/parsnips in a roasting tin with sausages, add a tbl sp wholegrain mustard, a tblsp of oil and bake, turning once for an hour.
baked risotto works ! Really, it does, google the many recipes- changed my life- just don't add too much cheese.
Roast a full red pepper and stuff with feta, mint and cous cous- two dishes admittedly, but delicious.
Soup- shove veg and lentils in pan with veg stock, leave for half hour, and blitz.
Red lentil and chickpea soup from BBC website is lovely.
Is easy cook rice okay? Because a packet of easy cook rice, peas and, broccoli, takes twenty minutes (adding peas and broccoli later) add soy sauce ang spring onions, and quickly wok with a whisked egg- egg fried rice yum
