Muffin cases collapse after decoration

I'm baking liver cake muffins to sell do my dog-mad friends. Baked the liver cake and put into paper muffin cases with paw prints on. When they had cooled, my daughter iced them for me using low-fat cream cheese and a couple of dashes of vanilla essence. They looked fantastic when she had finished. We put them in the fridge in Tupperware boxes with lids on. The next morning, the cases had collapsed leaving the muffins standing on a circle of paper. We lifted them off and put them into fresh cases only to have the same happen within a few hours. Why is this? And how can I produce lovely pert muffins in cases that stay up?!

I've had that before when I've used cheap cases (I never learn!)

Has it happened before with these muffins? Could be because they are greasy or an odd texture (just how dogs love them!)

BTW I'd love the recipe :-)

I would guess that the moisture content of the liver cake is soaking the paper cases making them unstable? Just a guess.

I know you are trying to appeal to the visual sense of the owners but I'm really not sure it's worth making that much effort for a dog treat that will probably be devoured in about 2 seconds flat! I have yet to meet a dog that doesn't like liver cake. Grin

Try using those foil cases, maybe use two at a time. Or buy some silicon ones from Poumdland or similar and factor them in to the production of the 'cakes'? Smile

I think it might be because you put them in the fridge. try leaving them out.
