What can I cook for dinner <lazy>

I have been spring cleaning all morning and have completely forgotten to plan dinner, I haven't got funds for a takeaway tonight either so I'm going to have to cook, which I don't mind but I need inspiration.

I have a stocked store cupboard with things you'd expect (beans, rice, tomatoes, pasta etc)

The only meat I have defrosted is bacon, I have most other meat in the freezer but I'm not sure I have time to defrost.

I have loads of veg, a small amount of cheese and 1 egg.

We're not fussy, we eat anything although we had pasta yesterday so I'd rather not give it to them today.

Ideas please? Smile

I know it contains pasta but your ingredients are screaming homemade minestrone to me!

Bean and vegetable stew served with plain rice, grated cheese available for those who like it. Easy peasy. Just chop up some onions and garlic, soften them in a little oil in a large pot/flameproof casserole, add any other vegetables you fancy/can be bothered to prepare, let it all cook for a few minutes, then put in a tin of tomatoes, plenty of pepper and whatever else in the way of seasoning (herbs, spices, salt, stock cubes/powder) you fancy and have available. You could make it a little bit spicy, which is always tasty. A good dollop of tomato puree/sundried tomato puree will help with colour, flavour and consistency.

this thread reminded me that I've got home made veggie burgers, pitta pockets, chilli cheese, pancake batter, chocolate orange sponge and sauce to use up! yummy!!!! races downstairs to stuff face
