Salad ideas

Today I have had:

Salad one - red onion, cucumber, lemon juice, beetroot, flat leaf parsely

Salad two - red onion, red chilli, lemon juice, coriander, avocado

Any ideas for other minimum prep, non-leafy salads with really 'big' flavours please? Am on a vitamin C kick!

At the moment I'm really into:

Feta, beetroot, quinoa, rocket and a bit of balsamic dressing.

Roast chicken, leaves, mango,cucumber, spring onion, sweet chilli dressing

Tomatoes, mozzarella and basil with a little olive oil.

Oops - should have said am veggie and hate tomatoes! Thinking sides rather than main.

Feta & beetroot - lovely

I do a mango one like the avocado one below, but mango instead of avo.

Have never tasted quinoa.

Haha ok!! Waitrose do quinoa and puy lentil sachet type things that you just chuck in the microwave for 1 minute. Bit more expensive than a bag of dried but really convenient.

Veggie and non- tomato but taking a bit longer...half a butternut squash filled with peppers, courgettes and red onion chunks with a bit of goats cheese on top. Minimal effort but needs a while in the oven and with chilli flakes on is great as a side or main.

Ooh and quinoa or bulgar wheat with pomegranate, red onion, cucumber and feta is good too.

Bulgur, green pepper, sultanas, onion, cucumber, feta, flat parsley

They all sound gorgeous - except for the sultanas. Sultanas belong in scones, not salad. grin

I make salads with what ever is in the fridge. I like warm salads with steamed green beans or broccoli, add a selection of grilled bacon, spring onions, tomatoes, avocado, cucumber, grilled haloumi, feta, goats cheese, Parmesan, ham, leftover veg, boiled eggs, leftover meat...most things work fine...it's the salad dressing that makes the biggest difference.

I make a salsa salad with chillies, cucumber, spring onions, parsley, coriander, black pepper and lemon juice (tomatoes optional)

Red cabbage, pear or green grapes, Stilton

White cabbage, sliced leek, grated apple, carrot, chopped orange, dressing to include Greek yoghurt, orange juice, slug of mayo. Walnuts go nice in this too

Roast some waxy potatoes, red onion, peppers and lemon wedges with some garlic and olive oil
Toss in some Greek yoghurt/mayo/crushed garlic then cool in the fridge before serving

Watermelon, feta and black olives. Sweetcorn, black beans and spring onions,. Broad beans and grilled peppers. Bulghar wheat, cucumber, spring onions and pomegranate seeds.

This is making me feel hungry enough for salad number 3. smile

Deseeded cucumber finely sliced, carrot finely shredded, dressing made with equal quantities of rice wine vinegar, sesame oil, light soy sauce and caster sugar. Sprinkle with lightly toasted sesame seeds.

Every week I make a huge salad for our wraps each day for lunch.

Today's was some freshly harvested cabbage, shredded, and some lettuce shredded, some grated carrot, a couple of boiled potatoes chopped up, some of my home made runner bean relish, cheese grated, with mayo and some felafel all crushed up. But I usually bung in anything I have, gherkins chopped up fine, cuke, toms if I have any fresh ( I never buy them, got to be home grown or nothing ), a finely chopped shallot or two, some couscous, avocado, peppers, roasted courgette or onion if I remember...the list is endless. I like to mix up fresh with roasted...add a roasted onion chopped up fine, it really gives some depth to a salad. And of course you can add other things like cooked lentils, chick peas, fresh peas or peashoots (have a huge pot of these growing so will add a handful to next week's), halloumi grilled or fried and chopped...

I know it has leaves but this is my current favourite -
Baby spinach
Beetroot
Feta
Toasted pumpkin seeds
A little cold pressed rapeseed oil drizzled over the top.

I do a fake Nicoise a lot (basically I leave out the olives grin) and tend to put avocado in a big salad as it gives a creamy taste so I don't need dressing.

My other favourite is walslaw - combo of Waldorf and coleslaw, so cabbage, carrot, onion, celery, apples, walnuts, grapes in a mayo type sauce.

Brilliant. Thanks everyone. I should have said that I don't like mayo/creamy dressings (am a fussy bugger, sorry).

I like the idea of rice wine/soy dressing a lot.
