I have approx. 100g fresh ginger left from a new recipe I am trying today - please could you recommend some recipes that I can make to use it up (sweet or savoury).

Is it still whole, and unpeeled?
It will last several weeks in a cool, dark cupboard, if you want to keep it for a bit.

I suspect if it is grated, you could freeze til you want it again.

We steam fish like salmon, sea bass or sea bream with shredded ginger, garlic and spring onions stuffed in the cavity.

It will last for ages in the freezer - I put pieces of ginger straight in the freezer then just grate it each time I need it.

Yes, it is whole on unpeeled (apart from a couple of cut edges). The fish dish sounds yummy.

gretagrape do you freeze it unpeeled?

Yes, I just put it into a plastic box then grate it unpeeled while it's still frozen then put it back again - not sure if it should be peeled but I've never bothered!

I peel ginger, chuck it in the food processor and then push it into ice cube trays, sometimes I mix with garlic and chilli, it's just that bit easier and less faffy and I always have it to hand.

I freeze it unpeeled.

Then I usually peel however much I need with a potato peeler (which is much easier when it is frozen) and then grate it

You can grate it and mix it with soy sauce, oyster sauce and tomato sauce and keep it in a jar to use as a stir fry sauce.

Ginger makes a lovely 'pick me up tea' especially in the afternoon.
Infuse in hot water. Add some lemon, honey if you like.
