What can I do with a couple of large courgettes ?

They need using up, I was thinking maybe a courgette and potato soup. Does anyone know a naice recipe for it ?
Will 2 courgettes be enough ?
There is only me and the Dts who are 3.
I also have an aubergine and lots of peppers so could do something Mediterranean like. I would be really grateful for any other suggestions.
Preferably semi healthy as I am still kidding myself that I am going to lose weight this month Grin

I just had salmon Steaks on buttery courgettes. Just did them in the microwave then added butter, and salt, yummy.

You could do a type of moussaka, courgettes instead of aubergines.

Grin Bigbum, your name made me chuckle. Yes after it posted I did think oh dear, that could look a little bit "food play" ish.
We have an aubergine too, so could use both. We love moussaka so that would go down well.
Dosh how did you cook them in the microwave ?

You could make courgette fritters - nigella has a fab recipe which you can adapt with different cheese or herbs or whatever. It's a bit faffy with the grating etc but they are seriously good.

Oooh minestrone would go down really well.
I got some pasta for Christmas - the sort in a jar gift pack sort of thing, not just a bag of pasta from Aldi Grin I can use that.

Courgette noodles cut into noodle width strips not the seedy middle bit then stir fry for a few mins in butter serve in place of noodles or spaghetti for a low carb meal.

I had lots over the summer from the garden and would recommend...courgette and hazelnut burgers and courgette and lemon cake which I actually made again and again. Google for the recipe, there's a few online. They don't freeze at all so you do have to use up!

a favourite here is mince with courgette and pasta.
a bit like spag bol, but using cougette instead of tomatoes.
fry mince, add a chopped onion, a little garlic, oregano. then add cubed cougettes (with their skin) and boil for 10 min or so. season to taste.

We've just made two of the simplest dishes with courgettes.

Roasted vegetables with chillies and olive oil (courgettes, peppers, cherry tomatoes, red onions, potatoes) baked at gas mark 6 for 50 mins.

Turkey enchiladas (turkey mince cooked with red onion, garlic, courgettes and cheese put in tortilla wraps topped with a sauce of tomatoes, onions, chillies and paprika, baked for 20 mins)
