It's a recipe from two greedy Italians- we're covering it in the cookbook club this month. I'll see if I can find it online.

Mmm
Tonight - beef casserole.
After that no idea! Dh has moved jobs as of today, which means a longer commute, so we won't all be eating together in the week. Don't want to be cooking twice every night (and yes he can cook for himself but would then live entirely on sausages and burgers) so need to think up some stuff that is easy to keep warm or reheat (but no microwave; as I have a teeny kitchen and nowhere to put one)

Tonight - smoked haddock chowder

Friday - quorn sausages, roast potatoes, frozen veg and gravy

Saturday - mince and potatoes with peas and sweetcorn

Sunday - cheesy pasta bake with carrots and broccoli

Monday - spaghetti bolognese (I only use 1/3 of a pack of turkey mince per meal and bulk out with veg, so lots of onion, mushrooms and a green pepper)

Tuesday - baked potatoes and salad

Wednesday - chilli and rice for me, fish fingers and chips for dd (it's her 'naughty' day where she gets to choose because I'm making something she won't eat)

Thursday - chicken and veggie stir fry with noodles (tiny bit of chicken for flavour more than anything, with lots of onion, mushrooms, carrots, broccoli, pineapple and a pepper)

Friday - ham, cheese and veggie omelettes with toast and any left over salad bits

Breakfast - cereal, toast or porridge

Lunch - sandwiches, pizza muffins or homemade veggie and lentil soup

I've never really done a strict meal plan before, but I'm giving it a go this year. I can already see how it will save me even more ££'s and I budget shop as it is Smile

I always have the best intentions when it comes to planning meals but for some reason I never seem to fancy what I have planned for that evening and end up rummaging in the cupboards I infuriate myself that I do this because I can't seem to force myself to eat what I don't fancy because I don't really enjoy it.
Does anyone else have that problem? Do you just ignore what you fancy to eat and eat what you have planned?

Clutterbugsmum · 02/01/2014 20:33

Thank you. But to be fair I normally only do week or 2 at a time. But I did it to get away from DH who is dying from the cold manflu Grin.

Gemizzel, the meals on my list I have about 90% ingrediants in either fridge/freezer and cupboards so I may change things around if I don't fancy what I have Planned.

starofbethlehem - do you have a slow cooker? I find ours invaluable for this reason.

The DCs have after school activities 4 nights out of 5 - their choice not mine, I'm too lazy to be a tiger mother, and DH can be home anything between 6 and 10, so a lot of my stuff can be done in the slow cooker and then just 3 mins to microwave frozen rice / boil fresh pasta to go with it.

Tonight: Thai red curry (butternut squash and pineapple)
Tomorrow: potatoes with beef casserole from my huge batch now in freezer
Sunday: pork medallions with baked apple, peas and potato
Monday: chunky lentil/veg soup with bread (freezer batch)
Tuesday: chilli con carne with brown rice (freezer again!)
Wednesday: Cajun salmon with rice, roast tomatoes and whatever other veg is handy
Thursday: soup again
Friday: eating out
Saturday: eating out
