Batch cooking

I'm pleased with this evenings achievements and home alone with no one but all you lot to share with.

I just did a monster batch cook session and it went like this.

Reheat yesterday's big pot of tomato sauce.
Brown a massive packet of mince with loads of onion and garlic. Decant
Brown a packet if cooking bacon with mushroom and carrot and two big spoons of a garlic and rosemary preserve I was given. Decant
Add generous helping if frozen peas and sweetcorn.

This left me with a huuuuuge tray of yummy meat veg mix.

In a selection of Pyrex dishes, takeaway tubs (microwaveable and oven able) I then created

6x portions of cottage pie (above mix, splash of gravy, deliberately leftover mash potato)

6x portions of moussaka (above mix, tom sauce, sliced Aubergine, lots of grated cheese and bit if mozzarella)

2x portions of basil dumplings and bolognaise. (Above mix, Tom sauce and left over from last night basil dumplings)

I still have a lot of tomato sauce which I will freeze in pizza portions.

I love cooking Smile an hour and a half in a quiet clean kitchen getting creative was a pleasure.

I am loving knowing that I can pick and choose when I will bother to cook through the week and will only need to cook with toddler if I feel like it! Bliss Smile

Smile Thank you. I am not alone.

I miss having lots of people to cook for.
At least batch cooking means I can make loads even if there is no one to get excited about it. The toddler doesn't count Grin

Basil du, plings sound great! Do you just chop basil into a standard dumpling mix, or is it more tricksy than that? Smile
